The Regality of Truffle Oil
Ahhh, Truffle Oil! Where to begin?!
Your cabinets should not be empty of this! Truffle oil is a regal finishing oil - not to be confused with everyday cooking oil. A finishing oil is used to enhance the flavor of a dish after it is cooked, for example, the recipe listed above. Are the flavors in this dish already fantastic? Of course they are, but after the food has been plated, the flavor of the dish is exponentially enhanced when you lightly drizzle some fragrant, velvety black truffle oil on top!
Because actual truffles are so expensive (black winter truffles have been nicknamed 'The Black Diamond of the Kitchen'...and are appropriately priced!), truffle oil can be a good way to experience the flavor of the truffle without breaking the bank. However, if you are dining in a restaurant that offers a thin shaving or two of truffle with a meal on the menu - get it! The flavors will dance in your mouth and you will soon realize that the cost of the dish you are savoring will be worth every penny!
...But for more realistic, everyday uses - buy truffle oil. It comes in both the white and black truffle varieties (generally in 2-3 oz. jars) and falls in the average cost range of $12 - $20; And though it seems pricey for such a small amount, the stuff does last! The oil is fairly potent, so only a few drops or a very light drizzle is necessary.
