Jamòn ibèrico
Ok people, you absolutely MUST try this stuff at some point! Jamòn ibèrico is a cured Spanish ham and comes from black Iberian pigs whose diet consists mostly of acorns and herbs. It looks very similar to prosciutto and is sliced the same as well (in paper-thin slices). However, unlike prosciutto, this stuff is PRICY - running upwards of $98.00/lb (we only bought two slices and it still came to $2.50 a pop!). Price aside, it is worth every penny. It melts in your mouth and has such a silky texture. Because the Black Iberian pigs have a diet of mostly acorns, that flavor comes through as a luscious tease for the Taste-Buds!
Jamòn ibèrico can't be found easily but it can be found! We suggest searching your local high-end deli/meat markets. We found our taste at Wegmans.
